Chicken skin is often eaten with salt, but it actually goes well with sauce.Especially the sweet Toriishi special sauce.However, it is very fatty and does not mix well with the sauce.To achieve this, the chicken is skewered using Toriishi's unique method, then grilled and left to rest for three days (after which it will shrink to roughly half its size), allowing the flavor of the chicken skin and the special sauce to fully mature.
